Depending on the maturity of the wild rice when it arrives and depending on the weather conditions at our plant, the wild rice inside the hulls is cured after 4 to 14 days in windrows or 4 or 5 days in bags. We can tell that it's ready by its consistent dark brown colour and by its water moisture content (close to 37%). | ||||||||||||||
The rice is now ready to be parched. The windrow is scooped up into a large blue hopper car with hand shovels. The forklift empties the hopper car contents into the large green feed box that sits half outside and half inside the building. The rest of the processing of wild rice takes place indoors. | ||||||||||||||
